Origin

An incredible variation on one of our favourites, have a great rum for the base of this one. The Royal Hawaiian Mai Tai was first mixed at the Surf Bar of the Royal Hawaiian Hotel on Waikiki beach in 1971. This cocktail is credited as being the first Mai Tai to include pineapple juice. Tropical, boozy and perfect for summer.

How to make it

1. Add all the ingredients into a shaking tin
2. Add a little wedge of lime into the tin to shake with.
3. Add a small scoop of crushed ice and shake for 10 seconds
4. Pour the cocktail and remaining ice into the drinking glass
5. Top up the glass with crushed ice, careful not to over dilute
6. Garnish with a wedge of pineapple, mint leaves and edible orchids (if you’re being fancy)

This is our favourite Mai Tai. Fresh, tropical and lime notes upfront with tropical and funky rum - sounds like a great drink! On tasting it’s perfectly balanced between sweet and tart. It’s rich but not heavy - perfect for a BBQ or a summer evening. The rums work brilliantly with pineapple and the sweet orgeat. A delicious cocktail, if you’ve never had a Mai Tai, start with this one.
