The Paper Plane is a modern classic. It was created by the legendary bartender Sam Ross, while he was working at Milk & Honey in New York in 2008. This cocktail was originally created for another bar. The Violet Hour in Chicago asked Sam to create a cocktail for their summer menu. He created the Paper Plane, a riff on the Last Word specs, all equal parts. He named this cocktail after the popular M.I.A song. His cocktail was served at The Violet Hour as the ‘Paper Airplane’. Following this, Sam decided the cocktail was too bitter and subbed out the Campari for Aperol. This was the version he served in New York and it became incredibly popular.

How to make it

1. Add the ingredients to a cocktail shaker
2. Add ice and shake for 10-12 seconds
3. Double strain into a chilled cocktail glass

This cocktail is the perfect balance of all its ingredients. It changes dramatically as you taste it. Take a sip and you get bright tart citrus that turns to woody flavours from the bourbon. Then there's a sweet fruity flavour from the Amaro which blends right into a little bitterness from the aperol. So refreshing and every ingredient can be tasted. The mix of deeper flavours and lighter notes in the Paper Plane is amazing. If you like a Negroni and whiskey, you'll love this.
